Getting the Medu Vada Right
Just before the last round of blending, add salt to the batter in the blender and give it one last blend.Take out the batter in a bowl and mix it well, using your hand.Add chopped green chilli, ginger, curry leaves, and black pepper. Mix well again.Now, heat oil in a kadhai or a wok. To check if the oil is hot enough, add a drop of batter to the oil. If it rises immediately, then the oil is hot enough.Grease your left palm with water and add a lemon sized blob of batter. Gently pat it to a round shape and then poke a whole at the centre.Overturn your left palm on to the kadhai and drop the batter in the oil carefully. Keep the flame to low initially.Keep frying the vadas till they turn golden brown in color.Enjoy hot Medu Vadas with Sambhar and coconut chutney.
