Getting the Medu Vada Right
  • Just before the last round of blending, add salt to the batter in the blender and give it one last blend.
  • Take out the batter in a bowl and mix it well, using your hand.
  • Add chopped green chilli, ginger, curry leaves, and black pepper. Mix well again.
  • Now, heat oil in a kadhai or a wok. To check if the oil is hot enough, add a drop of batter to the oil. If it rises immediately, then the oil is hot enough.
  • Grease your left palm with water and add a lemon sized blob of batter. Gently pat it to a round shape and then poke a whole at the centre.
  • Overturn your left palm on to the kadhai and drop the batter in the oil carefully. Keep the flame to low initially.
  • Keep frying the vadas till they turn golden brown in color.
  • Enjoy hot Medu Vadas with Sambhar and coconut chutney.
